Season your protein of choice with salt and pepper.
In a small bowl, add all the sauce ingredients and stir to combine.
Cook KA-ME Udon Stir-Fry Noodles according to the package instructions.
Heat 1 tbsp oil in a large skillet or wok over medium heat. Add the protein and saute until cooked through. Remove the protein from the pan and set aside.
In the same pan, add the remaining 1 tbsp of oil along with the onion and garlic. Cook until aromatic.
Add the cabbage, carrot and mushrooms. Continue to cook for 2-3 minutes until vegetables are tender.
Add the protein, cooked noodles and sauce to the pan. Toss together until the noodles are coated in the sauce. Then add the scallions and mix to combine.
Serve and enjoy!
